Ingredients
6 ears of fresh corn, shucked
1/2 cup unsalted butter, softened
1 tablespoon chili powder (Ancho or standard)
Zest of 2 medium limes
1 tablespoon fresh lime juice
1/2 teaspoon smoked paprika
1/2 teaspoon sea salt
1/4 cup fresh cilantro, finely chopped
Instructions
Step 1: In a small mixing bowl, combine the softened butter, chili powder, lime zest, lime juice, smoked paprika, and sea salt. Mash with a fork until smooth and well-incorporated.
Step 2: Preheat your outdoor grill to medium-high heat (about 400°F/200°C) and lightly oil the grates.
Step 3: Place the shucked corn directly onto the grill grates. Grill for 10-12 minutes, turning every 2-3 minutes, until the kernels are tender and charred in spots.
Step 4: Remove the corn from the grill and immediately spread a generous tablespoon of the chili lime butter over each ear of corn.
Step 5: Sprinkle with chopped cilantro and an extra pinch of salt if desired. Serve hot.
Notes
For extra spice, add 1/4 teaspoon of cayenne pepper to the butter. You can also use frozen corn cobs if fresh is out of season, just ensure they are fully thawed and patted dry before grilling.
