Ingredients
1.5 lbs boneless skinless chicken thighs
1 fresh pineapple, sliced into rings
1/2 cup pineapple juice
1/4 cup soy sauce
1/4 cup brown sugar
2 cloves garlic, minced
1 tbsp fresh ginger, grated
1 tbsp olive oil
Chopped green onions for garnish
Instructions
Step 1: In a large bowl or zip-top bag, combine the pineapple juice, soy sauce, brown sugar, garlic, and ginger to create the marinade.
Step 2: Add the chicken to the marinade and refrigerate for at least 2 hours (ideally 4-6 hours).
Step 3: Preheat your grill to medium-high heat and lightly oil the grates.
Step 4: Remove chicken from the marinade and grill for 6-8 minutes per side until the internal temperature reaches 165°F.
Step 5: During the last 5 minutes of cooking the chicken, place pineapple rings on the grill and cook until charred marks appear, about 2-3 minutes per side.
Step 6: Let the chicken rest for 5 minutes before serving with the grilled pineapple and a garnish of green onions.
Notes
For best results, use fresh pineapple rather than canned. If you only have canned, ensure you buy the kind in 100% juice so you can use it for the marinade.
