Ingredients
1.5 lbs chicken breast or thighs, cut into bite-sized pieces
4 medium zucchinis, spiralized into noodles
4 cloves garlic, minced
2 tablespoons olive oil
3 tablespoons soy sauce or coconut aminos
1 teaspoon grated fresh ginger
1 tablespoon sesame oil
Salt and pepper to taste
Optional: Sesame seeds and red pepper flakes for garnish
Instructions
Step 1: Prepare the zucchini noodles using a spiralizer and pat them dry with a paper towel to remove excess moisture.
Step 2: In a small bowl, whisk together the soy sauce, grated ginger, and sesame oil to create the stir fry sauce.
Step 3: Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until golden brown and cooked through.
Step 4: Add the minced garlic to the skillet and sauté for 30 seconds until fragrant, ensuring it doesn't burn.
Step 5: Add the zucchini noodles to the skillet. Toss with the chicken and garlic for 1-2 minutes until slightly softened.
Step 6: Pour the prepared sauce over the mixture and toss for one more minute. Remove from heat immediately and garnish with sesame seeds or red pepper flakes if desired.
Notes
To prevent soggy noodles, do not salt the zucchini before cooking and remove from heat immediately after tossing with sauce.
