Ingredients
1 lb lean ground turkey (93%)
1 medium head of cauliflower, cut into small florets
4 cloves garlic, minced
3 tablespoons unsalted butter
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1 tablespoon fresh parsley, chopped
1/2 lemon, juiced
Instructions
Step 1: Heat olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes).
Step 2: Add the cauliflower florets to the skillet with the turkey. If the pan is dry, add 1-2 tablespoons of water. Cover with a lid and steam for 3-4 minutes until the cauliflower is fork-tender.
Step 3: Remove the lid and push the turkey and cauliflower to the sides of the pan. Place the butter and minced garlic in the center.
Step 4: Sauté the garlic in the butter for 30-60 seconds until fragrant, then toss everything together to coat thoroughly.
Step 5: Season with salt, pepper, and red pepper flakes. Remove from heat and stir in the fresh parsley and lemon juice before serving.
Notes
Ensure cauliflower florets are small for faster cooking. Use grass-fed butter for extra flavor.
