Ingredients
4 bone-in, skin-on chicken thighs (approx. 1.5 - 2 lbs)
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1 tablespoon olive oil
4 tablespoons unsalted butter
6 cloves garlic, minced
1/4 cup chicken broth
1 tablespoon fresh lemon juice
1 tablespoon fresh parsley, chopped
Instructions
Step 1: Pat the chicken thighs completely dry with paper towels and season both sides with salt, pepper, and paprika.
Step 2: Heat the olive oil in a large skillet over medium-high heat. Place chicken thighs skin-side down in the hot pan.
Step 3: Cook undisturbed for 8-10 minutes until the skin is deep golden brown and crispy.
Step 4: Flip the chicken thighs and cook for another 5 minutes.
Step 5: Reduce heat to medium and add the butter and minced garlic to the pan. Once the butter melts, stir in the chicken broth and lemon juice.
Step 6: Use a spoon to baste the chicken with the garlic butter sauce repeatedly for the final 3-5 minutes of cooking until the internal temperature reaches 165°F.
Step 7: Garnish with fresh parsley and let rest for 5 minutes before serving.
Notes
For the best results, use a cast iron skillet to achieve maximum crispiness on the chicken skin.
