1 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup powdered sugar
1 large egg yolk
2 tsp vanilla extract
2 cups all-purpose flour
1/4 tsp salt
1 tbsp cornstarch
8 oz semi-sweet chocolate, melted
1 tsp coconut oil (optional, for thinning chocolate)
Instructions
Step 1: In a large bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
Step 2: Mix in the egg yolk and vanilla extract until well combined.
Step 3: Sift together the flour, salt, and cornstarch, then gradually add to the wet ingredients until a soft dough forms.
Step 4: Flatten the dough into a disk, wrap in plastic, and refrigerate for at least 1 hour.
Step 5: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
Step 6: Roll the dough to 1/4 inch thickness and cut into circles with a hole in the center, then bake for 10-12 minutes until the edges are just barely golden.
Step 7: Once cookies are completely cool, dip the bottoms in melted chocolate and drizzle stripes over the top.
Notes
Ensure the cookies are fully cooled before dipping in chocolate to prevent melting the shortbread structure.
