Ingredients
1 tsp ceremonial grade matcha powder
2 oz warm water (not boiling)
1/2 cup fresh pineapple chunks or 4 oz pineapple juice
6-8 fresh mint leaves
1/2 oz fresh lime juice
4 oz sparkling water or club soda
Ice cubes
Instructions
Step 1: Sift the matcha powder into a small bowl to remove any lumps.
Step 2: Add the warm water (approx. 175°F) to the matcha and whisk vigorously in a 'W' or 'Z' motion until a thick, frothy foam forms on top.
Step 3: In a cocktail shaker or tall glass, add the fresh mint leaves and pineapple chunks. Use a muddler to gently crush them to release the juices and oils.
Step 4: Add the lime juice and the prepared matcha whisked liquid into the shaker.
Step 5: Fill the shaker with a handful of ice and shake for about 15 seconds until the outside of the shaker feels very cold.
Step 6: Double strain the mixture into a glass filled with fresh ice to ensure no mint bits or pineapple pulp remain.
Step 7: Top with sparkling water and stir gently to combine.
Step 8: Garnish with a fresh mint sprig and a pineapple wedge before serving your fresh matcha mocktail pineapple mint.
Notes
Ensure you use ceremonial grade matcha for the best flavor. If you find it's not sweet enough, add a teaspoon of agave or honey.
