Ingredients

500g Fromage Blanc or full-fat Greek yogurt
4 large eggs, separated
100g granulated sugar
40g all-purpose flour
1 teaspoon vanilla extract
Zest of one lemon
Pinch of salt

Instructions

Step 1: Preheat your oven to 325°F (160°C) and grease an 8-inch springform pan, lining the bottom with parchment paper.
Step 2: In a large bowl, whisk the egg yolks with 70g of the sugar until the mixture is pale and thick.
Step 3: Stir in the Fromage Blanc, vanilla extract, lemon zest, and sifted flour until the batter is smooth and well combined.
Step 4: In a separate clean bowl, beat the egg whites with a pinch of salt until soft peaks form, then gradually add the remaining 30g of sugar and beat until stiff, glossy peaks form.
Step 5: Gently fold one-third of the egg whites into the cheese mixture to lighten it, then carefully fold in the remaining whites until no streaks remain.
Step 6: Pour the batter into the prepared pan and bake for 45-50 minutes until the top is golden and the center has a slight wobble.
