Ingredients
500g Fromage Blanc or full-fat Greek yogurt
4 large eggs, separated
100g granulated sugar
40g all-purpose flour
1 teaspoon vanilla extract
Zest of one lemon
Pinch of salt
Instructions
Step 1: Preheat your oven to 325°F (160°C) and grease an 8-inch springform pan, lining the bottom with parchment paper.
Step 2: In a large bowl, whisk the egg yolks with 70g of the sugar until the mixture is pale and thick.
Step 3: Stir in the Fromage Blanc, vanilla extract, lemon zest, and sifted flour until the batter is smooth and well combined.
Step 4: In a separate clean bowl, beat the egg whites with a pinch of salt until soft peaks form, then gradually add the remaining 30g of sugar and beat until stiff, glossy peaks form.
Step 5: Gently fold one-third of the egg whites into the cheese mixture to lighten it, then carefully fold in the remaining whites until no streaks remain.
Step 6: Pour the batter into the prepared pan and bake for 45-50 minutes until the top is golden and the center has a slight wobble.
Step 7: Turn off the oven and leave the door slightly ajar, allowing the french cheesecake easy elegant airy cake to cool inside for 15 minutes to prevent sinking.
Notes
Always use room temperature eggs for the best volume. If Fromage Blanc is unavailable, strained Greek yogurt is a perfect substitute.
