Ingredients
1.5 cups All-purpose flour
1/2 cup Unsalted butter, cold and cubed
1 tablespoon Granulated sugar
1/2 teaspoon Salt
1/4 cup Ice water
1 pound Fresh figs, sliced
2 tablespoons Honey
1 teaspoon Fresh thyme leaves
1 Egg (for egg wash)
1 tablespoon Turbinado sugar (for sprinkling)
Instructions
Step 1: In a large bowl, whisk together flour, granulated sugar, and salt. Cut in the cold butter using a pastry cutter until the mixture resembles coarse crumbs.
Step 2: Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Wrap in plastic and refrigerate for 30 minutes.
Step 3: Preheat your oven to 400°F (200°C). Roll out the chilled dough on a piece of parchment paper into a rough 12-inch circle.
Step 4: Arrange the sliced figs in the center of the dough, leaving a 2-inch border. Drizzle with honey and sprinkle with fresh thyme.
Step 5: Fold the edges of the dough over the figs, pleating as you go. Brush the crust with egg wash and sprinkle with turbinado sugar.
Step 6: Bake for 30-35 minutes or until the crust is golden brown and the figs are bubbly. Let cool slightly before serving.
Notes
Ensure the butter is extremely cold for the flakiest crust results.
