Instructions
Step 1: Preheat your waffle iron to the medium-high setting and lightly grease with non-stick spray or a brush of oil.
Step 2: In a large mixing bowl, whisk together the flour, cornstarch, sugar, baking powder, and salt until well combined.
Step 3: In a separate medium bowl, beat the eggs and then whisk in the water, vegetable oil, and vanilla extract.
Step 4: Pour the wet ingredients into the dry ingredients. Gently stir with a spatula until just combined, leaving some small lumps in the batter.
Step 5: Let the batter rest for 5-8 minutes to allow the baking powder to activate for a fluffier interior.
Step 6: Pour about 1/2 to 2/3 cup of batter onto the hot waffle iron. Close the lid and cook until the waffle is golden brown and the steam has mostly stopped.
Step 7: Remove the waffle carefully and serve immediately with your favorite toppings.
