Ingredients
14 oz extra-firm tofu, pressed and cubed
2 cups broccoli florets
1 red bell pepper, sliced
1 large carrot, julienned
1 cup snap peas
3 cloves garlic, minced
1 tbsp fresh ginger, grated
1/4 cup soy sauce (or tamari)
1 tbsp rice vinegar
1 tbsp maple syrup
1 tsp toasted sesame oil
1 tbsp cornstarch
2 tbsp avocado oil for frying
Instructions
Step 1: Press the tofu for at least 15 minutes to remove excess moisture, then cut into 1-inch cubes to prepare for your easy tofu stir fry with vegetables.
Step 2: In a small bowl, whisk together the soy sauce, rice vinegar, maple syrup, sesame oil, and cornstarch until smooth.
Step 3: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook until golden and crispy on all sides, then remove from the pan.
Step 4: Add the remaining tablespoon of oil to the pan. Sauté the broccoli and carrots for 3-4 minutes until they begin to soften.
Step 5: Add the bell pepper, snap peas, garlic, and ginger to the skillet. Stir-fry for another 2-3 minutes.
Step 6: Return the crispy tofu to the pan and pour the sauce over the easy tofu stir fry with vegetables. Toss constantly for 1-2 minutes until the sauce has thickened and coated everything.
Step 7: Serve your easy tofu stir fry with vegetables immediately over rice or noodles.
Notes
Always use extra-firm tofu for the best texture. Pressing the tofu is a non-negotiable step for crispiness!
