Ingredients
1.5 lbs chicken thighs, cut into bite-sized pieces
2 stalks fresh lemongrass, tender white parts finely minced
3 cloves garlic, minced
1 small shallot, finely chopped
2 tablespoons fish sauce
1 tablespoon soy sauce
1 tablespoon brown sugar
1/2 teaspoon ground turmeric
2 tablespoons vegetable oil
Fresh cilantro and lime wedges for garnish
Instructions
Step 1: In a medium bowl, whisk together the minced lemongrass, garlic, shallot, fish sauce, soy sauce, brown sugar, and turmeric to create a marinade for your easy thai lemongrass chicken recipe.
Step 2: Add the chicken pieces to the bowl and toss until every piece is thoroughly coated. Let it marinate for at least 10-15 minutes to allow the flavors to penetrate the meat.
Step 3: Heat the vegetable oil in a large skillet or wok over medium-high heat until shimmering.
Step 4: Add the chicken to the pan in a single layer. Sear for 4-5 minutes without moving them to develop a nice golden-brown crust, then stir and cook for another 5-7 minutes until fully cooked through.
Step 5: Remove from heat and serve your easy thai lemongrass chicken recipe immediately over jasmine rice, garnished with fresh cilantro and a squeeze of lime.
Notes
Make sure to only use the white and light green parts of the lemongrass for the best texture. Use leftovers for a flavorful cold salad topper the next day.
