1 teaspoon pure vanilla extract

Instructions
Step 1: In a medium heavy-bottomed saucepan, combine the rice, milk, sugar, and salt.
Step 2: Place the saucepan over medium-high heat and bring the mixture to a gentle boil, stirring frequently to prevent sticking.
Step 3: Reduce the heat to low and simmer, partially covered, for 40-45 minutes. Stir every few minutes to ensure the easy rice pudding stays smooth and doesn't burn.
Step 4: Once the rice is tender and the mixture has thickened to a creamy consistency, remove from heat.
Step 5: Stir in the vanilla extract. Let the easy rice pudding sit for 5 minutes to thicken further before serving warm or chilling.
Notes
If the pudding becomes too thick after refrigeration, stir in a tablespoon of milk before serving to restore the creaminess.
