4 Black cod fillets (approx 6-8 oz each)
1/2 cup White miso paste
1/4 cup Granulated sugar
3 tablespoons Sake
3 tablespoons Mirin
1 tablespoon Vegetable oil (for the pan)

Instructions

Step 1: In a small saucepan over low heat, combine the sake and mirin. Bring to a boil for 20 seconds to evaporate the alcohol.
Step 2: Reduce the heat to low and add the miso paste and sugar. Whisk constantly until the sugar has dissolved and the mixture is smooth. Let the marinade cool completely.
Step 3: Pat the black cod fillets dry with paper towels. Place them in a non-reactive container and pour the cooled miso marinade over them, ensuring all sides are coated.
Step 4: Cover the container and refrigerate for at least 24 hours, preferably 48-72 hours, for the best easy miso black cod recipe results.
