Ingredients
4 medium zucchini, spiralized
1 lb chicken breast, cut into bite-sized pieces
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 tablespoons butter
3 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Step 1: Use a spiralizer to create zucchini noodles (zoodles). Place them on a paper towel and sprinkle with a pinch of salt to draw out excess moisture.
Step 2: In a large skillet, heat olive oil over medium-high heat. Add chicken pieces, season with salt and pepper, and cook until browned and cooked through (about 5-7 minutes). Remove chicken from the pan and set aside.
Step 3: Reduce heat to medium. In the same skillet, melt the butter. Add minced garlic and cook for 1 minute until fragrant.
Step 4: Pour in heavy cream and bring to a gentle simmer. Let it cook for 3 minutes until slightly thickened. Stir in the Parmesan cheese until the sauce is smooth.
Step 5: Add the zoodles and cooked chicken back to the skillet. Toss gently for 2 minutes until the zoodles are heated through but still slightly crisp. Garnish with parsley and serve immediately.
Notes
To avoid watery zoodles, do not overcook them. They only need 1-2 minutes in the sauce.
