Ingredients
16 oz chilled sugar cookie dough (homemade or store-bought)
8 oz cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
1 cup strawberries, sliced
1/2 cup blueberries
1/2 cup kiwi, peeled and sliced
1/2 cup mandarin oranges, drained
1/4 cup raspberries
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
Step 2: Divide the sugar cookie dough into 12 equal portions. Roll each portion into a ball and then flatten it into an oval 'egg' shape about 1/4 inch thick on the prepared baking sheets.
Step 3: Bake for 10-12 minutes or until the edges are just lightly golden. Remove from the oven and let the cookies cool completely on a wire rack.
Step 4: In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Step 5: Once the cookie bases are entirely cool, spread a layer of the cream cheese frosting over each cookie, leaving a small border around the edge.
Step 6: Arrange the fresh fruit in decorative patterns on top of the frosting to resemble decorated Easter eggs.
Step 7: Serve immediately or refrigerate for up to 2 hours before serving to allow the frosting to set.
Notes
To prevent the cookies from becoming soggy, pat the fruit completely dry with a paper towel before placing it on the frosting. You can also glaze the fruit with a bit of melted apricot jam for a professional shine.
