Ingredients
2 lbs beef chuck roast, thinly sliced
2 large green bell peppers, sliced into strips
1 large yellow onion, sliced into strips
1/2 cup beef broth
2 tablespoons Worcestershire sauce
3 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
12 slices Provolone cheese
6 hoagie rolls
2 tablespoons butter, softened
Instructions
Step 1: Slice the beef chuck roast into very thin strips, cutting against the grain for maximum tenderness.
Step 2: Place the sliced beef, bell peppers, and onions into the slow cooker.
Step 3: In a small bowl, whisk together the beef broth, Worcestershire sauce, garlic, salt, and pepper; pour the mixture over the beef and vegetables.
Step 4: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours until the beef is very tender.
Step 5: When ready to serve, split the hoagie rolls, spread with butter, and toast under the broiler until lightly browned.
Step 6: Use a slotted spoon to pile the beef mixture onto the rolls, top with provolone cheese, and broil for another 1-2 minutes until melted.
Notes
Freezing the beef for 30 minutes before slicing makes it much easier to get thin pieces.
