4 boneless skinless chicken fillets
1 cup Panko breadcrumbs
1/2 cup all-purpose flour
2 large eggs, beaten
1 tsp smoked paprika
1 tsp garlic powder
1/2 tsp onion powder
Salt and black pepper to taste
Cooking oil spray

Instructions

Step 1: Preheat your oven to 425°F (220°C) and place a wire rack on top of a large baking sheet.
Step 2: Pound the chicken fillets to an even 1/2-inch thickness using a meat mallet or a rolling pin.
Step 3: Set up a dredging station: Flour mixed with salt and pepper in one bowl, beaten eggs in the second, and Panko mixed with paprika, garlic powder, and onion powder in the third.
Step 4: Coat each fillet in flour, then egg, and finally the Panko mixture, pressing firmly to adhere.
Step 5: Place fillets on the wire rack and spray the tops generously with cooking oil spray.
Step 6: Bake for 15-20 minutes or until the chicken is golden brown and reaches an internal temperature of 165°F.

Notes

For maximum crunch, toast the panko breadcrumbs in a dry skillet over medium heat for 2-3 minutes before using them to coat the chicken.
