Ingredients

1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) black-eyed peas, rinsed and drained
1.5 cups frozen corn, thawed (or fresh corn)
2 large Roma tomatoes, diced
1 large bell pepper (any color), diced
1/2 red onion, finely diced
1-2 jalapeños, seeded and minced
1/3 cup fresh cilantro, chopped
2 ripe avocados, diced
1/3 cup olive oil
1/4 cup lime juice (about 2 limes)
2 tablespoons red wine vinegar
1 tablespoon sugar or honey
1 teaspoon ground cumin
1/2 teaspoon chili powder
Salt and black pepper to taste

Instructions

Step 1: In a small bowl, whisk together the olive oil, lime juice, red wine vinegar, sugar, cumin, chili powder, salt, and pepper to create the cowboy caviar dressing.
Step 2: In a large mixing bowl, combine the rinsed black beans, black-eyed peas, corn, diced tomatoes, bell pepper, red onion, and jalapeño.
Step 3: Pour the dressing over the bean and vegetable mixture and toss gently until everything is well-coated.
Step 4: Add the freshly chopped cilantro and the diced avocado. Fold them in carefully to avoid mashing the avocado chunks.
Step 5: Cover and refrigerate your cowboy caviar for at least 30 minutes before serving to allow the flavors to meld.
Step 6: Serve chilled with your favorite tortilla chips or as a topping for grilled proteins.

Notes

To keep the avocado green longer, add it just before serving. You can also add a pinch of garlic powder to the dressing for extra depth.
