Ingredients
1.5 lbs chicken breast or thighs, cut into bite-sized pieces
1/2 cup orange marmalade
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon fresh ginger, grated
2 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
2 tablespoons vegetable oil
Salt and pepper to taste
Green onions and sesame seeds for garnish
Instructions
Step 1: Season the chicken pieces generously with salt and pepper.
Step 2: In a small bowl, whisk together the orange marmalade, soy sauce, rice vinegar, grated ginger, garlic, and red pepper flakes until well combined.
Step 3: Heat the oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook until golden brown and cooked through (about 5-7 minutes).
Step 4: Pour the marmalade mixture over the chicken in the skillet. Stir to coat every piece evenly.
Step 5: Let the sauce simmer and bubble for 2-3 minutes until it thickens and becomes a sticky glaze.
Step 6: Remove from heat and garnish with sliced green onions and sesame seeds. Serve immediately over rice.
Notes
For a thicker sauce, mix 1 tsp of cornstarch with 1 tsp of water and add it to the glaze while simmering.
