4 boneless skinless chicken breasts
1/2 cup all-purpose flour
2 large eggs, beaten
1.5 cups Panko breadcrumbs
1/2 cup grated Parmesan cheese
1 tsp garlic powder
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
2 cups marinara sauce
1.5 cups shredded mozzarella cheese
1/4 cup fresh basil, chopped
2 tbsp vegetable oil
Instructions
Step 1: Place the chicken breasts between two sheets of plastic wrap and pound them with a meat mallet to an even 1/2-inch thickness.
Step 2: Set up three shallow bowls: one with flour, salt, and pepper; one with the beaten eggs; and one with the Panko, grated Parmesan, garlic powder, and oregano.
Step 3: Dredge each chicken breast in the flour, then the egg, and finally the Panko mixture, pressing firmly to ensure the breading adheres well for the chicken parmesan recipe.
Step 4: Heat oil in a large skillet over medium-high heat. Fry the chicken for 3-4 minutes per side until golden brown, then transfer to a baking sheet.
Step 5: Top each chicken breast with 1/2 cup of marinara sauce and a generous portion of mozzarella cheese.
Step 6: Bake in a preheated oven at 400°F (200°C) for 10-15 minutes, or until the cheese is melted and bubbling. Garnish with fresh basil before serving.
Notes
For the crispiest results, ensure the oil is hot before adding the chicken. Do not over-crowd the pan.
