Ingredients
1.5 lbs chicken breasts, pounded to even thickness
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
3 tbsp unsalted butter, divided
1 small shallot, finely minced
4 cloves garlic, minced
1/4 cup dry white wine (optional)
1 cup heavy cream
1/2 cup freshly grated Parmesan cheese
5 oz fresh baby spinach
1/4 tsp crushed red pepper flakes (optional)
Instructions
Step 1: Season the chicken breasts on both sides with salt and pepper.
Step 2: Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add chicken and sear for 5-7 minutes per side until golden brown and cooked through (165°F internal temperature). Remove chicken and set aside.
Step 3: In the same skillet, add the remaining 2 tablespoons of butter. Sauté the shallot and garlic for 1-2 minutes until fragrant.
Step 4: Deglaze the pan with white wine if using, scraping up any browned bits. Let it reduce by half.
Step 5: Reduce heat to medium-low. Pour in the heavy cream and simmer for 2-3 minutes until slightly thickened.
Step 6: Stir in the Parmesan cheese until melted and smooth. Add the crushed red pepper flakes if desired.
Step 7: Add the fresh spinach to the sauce and toss gently until wilted, about 1-2 minutes.
Step 8: Return the chicken to the skillet, spooning the spinach sauce over the top. Serve immediately.
Notes
For a lighter sauce, you can substitute heavy cream with half-and-half, but you may need to add a teaspoon of cornstarch to help it thicken. Ensure the chicken is pounded to an even thickness for uniform cooking.
