Ingredients
1.5 lbs chicken breast, finely chopped
2 large eggs
1/3 cup all-purpose flour (or almond flour for keto)
1.5 cups shredded mozzarella cheese
2 tbsp chopped fresh parsley
2 tbsp chopped fresh chives
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
2-3 tbsp olive oil for frying
Instructions
Step 1: Finely chop the chicken breasts into small, 1/4-inch cubes and place them in a large mixing bowl.
Step 2: Add the eggs, flour, shredded mozzarella, parsley, chives, minced garlic, salt, and pepper to the bowl with the chicken.
Step 3: Mix everything together with a spatula until well combined and the chicken is evenly coated.
Step 4: Heat olive oil in a large non-stick skillet over medium heat.
Step 5: Using a large spoon, scoop about 2-3 tablespoons of the mixture and place it into the hot skillet. Flatten slightly with the back of the spoon.
Step 6: Fry the cheesy chicken fritters for 3-4 minutes per side, or until they are golden brown and the chicken is cooked through.
Step 7: Transfer the fritters to a plate lined with paper towels to drain any excess oil before serving warm.
Notes
Ensure the chicken is chopped very finely to help the fritters hold their shape. If the mixture is too wet, add an extra tablespoon of flour.
