Ingredients
1 large head of fresh broccoli, cut into florets
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup whole milk
1 1/2 cups sharp cheddar cheese, freshly grated
1/4 teaspoon garlic powder
1/4 teaspoon paprika
Salt and black pepper to taste
Instructions
Step 1: Wash the broccoli florets and place them in a steamer basket over boiling water. Cover and steam for 5-7 minutes until tender-crisp.
Step 2: While the broccoli is steaming, melt the butter in a medium saucepan over medium heat.
Step 3: Whisk in the flour and cook for 1 minute, stirring constantly to create a smooth roux without browning.
Step 4: Gradually pour in the milk while whisking continuously. Continue to cook and whisk until the sauce thickens and begins to bubble.
Step 5: Remove the saucepan from the heat. Stir in the garlic powder, paprika, salt, pepper, and the grated cheddar cheese until the cheese is completely melted and the sauce is smooth.
Step 6: Gently fold the steamed broccoli florets into the cheese sauce until well coated. Serve your cheesy broccoli immediately.
Notes
Always grate your own cheese for the smoothest sauce. Pre-shredded cheese contains anti-clumping agents that can make the sauce grainy.
