Ingredients
16 oz Rotini or Fusilli pasta
1 pint cherry tomatoes, halved
8 oz fresh mozzarella pearls (ciliegine)
1/2 cup fresh basil leaves, torn
1/4 cup extra virgin olive oil
2 cloves garlic, minced
1 tsp dried oregano
1/4 cup high-quality balsamic glaze
Salt and black pepper to taste
Instructions
Step 1: Cook the pasta in a large pot of salted boiling water according to package directions until al dente.
Step 2: Drain the pasta and rinse under cold water to stop the cooking process and cool it down; drain well.
Step 3: In a small bowl, whisk together the olive oil, minced garlic, dried oregano, salt, and pepper.
Step 4: In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, and mozzarella pearls.
Step 5: Drizzle the olive oil mixture over the salad and toss gently to ensure everything is evenly coated.
Step 6: Just before serving, fold in the fresh torn basil and drizzle the balsamic glaze generously over the top.
Notes
For best results, use a thick balsamic glaze rather than plain balsamic vinegar. If making ahead, add the basil and glaze right before serving.
