1.5 lbs chicken breasts, pounded thin
5.2 oz Boursin Garlic & Fine Herbs cheese
1/2 cup heavy cream
1/4 cup chicken broth
2 cups fresh baby spinach
2 tablespoons olive oil
Salt and pepper to taste
1 teaspoon garlic powder

Instructions

Step 1: Season the chicken breasts on both sides with salt, pepper, and garlic powder.
Step 2: Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 5-6 minutes per side until golden brown and cooked through (165°F internal temperature). Remove from pan and set aside.
Step 3: Reduce heat to medium. Pour in chicken broth to deglaze the pan, scraping the bottom with a wooden spoon.
Step 4: Add the Boursin cheese and heavy cream to the skillet. Stir constantly until the cheese is completely melted and the sauce is smooth.
Step 5: Add the baby spinach to the sauce and stir for 1-2 minutes until wilted.
Step 6: Place the chicken back into the skillet, spooning the creamy sauce over the meat. Serve immediately.

Notes

If the sauce is too thick, add a tablespoon of chicken broth or milk to reach your desired consistency.
