Ingredients
1.5 lbs chicken breasts, pounded thin
1 wheel (5.2 oz) Garlic & Herb Boursin cheese
1 tbsp olive oil
1/2 cup chicken broth
2 cups fresh baby spinach
Salt and black pepper to taste
Optional: Red pepper flakes for garnish
Instructions
Step 1: Season the chicken breasts on both sides with salt and black pepper.
Step 2: Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side until golden brown and cooked through (internal temp 165°F).
Step 3: Remove the chicken from the skillet and set aside on a plate.
Step 4: Pour the chicken broth into the skillet, scraping the bottom to release the browned bits. Reduce heat to medium.
Step 5: Add the Boursin cheese to the skillet and whisk until it is completely melted and smooth.
Step 6: Stir in the baby spinach and cook for 1 minute until just wilted.
Step 7: Return the chicken to the pan, coat with the sauce, and serve immediately.
Notes
If the sauce gets too thick while sitting, simply whisk in another tablespoon of chicken broth or warm water to reach your desired consistency.
