8 corn tostada shells
2 cups shredded cooked chicken (rotisserie works great)
1/2 cup BBQ sauce of choice
1 cup refried beans, warmed
1 cup shredded Mexican blend cheese
2 cups shredded romaine lettuce
1/4 cup red onion, finely diced
1/4 cup fresh cilantro, chopped
1/2 cup sour cream or ranch dressing for drizzling
1 lime, cut into wedges
Instructions
Step 1: In a medium skillet over medium heat, combine the shredded chicken and BBQ sauce. Stir frequently for 3-5 minutes until the chicken is heated through and well-coated in the sauce.
Step 2: Pre-heat your oven to 350°F (175°C). Place the tostada shells on a baking sheet and warm them for 2-3 minutes until they are fragrant and extra crispy.
Step 3: Spread about 2 tablespoons of warm refried beans onto each tostada shell to act as a base.
Step 4: Top the beans with a generous portion of the BBQ chicken mixture, followed by a sprinkle of shredded cheese.
Step 5: Add the shredded lettuce, diced red onions, and fresh cilantro on top of the chicken.
Step 6: Drizzle with sour cream or ranch dressing and serve immediately with lime wedges on the side.
Notes
Use a high-quality, thick BBQ sauce for the best results. If you prefer a spicier kick, add a dash of hot sauce to the chicken mixture.
