Ingredients
2 cups shredded cooked chicken (rotisserie works great)
1/2 cup your favorite BBQ sauce
4 large flour tortillas
2 cups shredded Monterey Jack cheese
1/4 cup red onion, thinly sliced (optional)
2 tablespoons fresh cilantro, chopped
1 tablespoon butter or oil for the pan
Instructions
Step 1: In a small bowl, mix the shredded chicken with the BBQ sauce until thoroughly coated.
Step 2: Heat a large skillet over medium heat and add a small amount of butter or oil.
Step 3: Place one tortilla in the skillet. Sprinkle 1/4 cup of cheese over the whole tortilla.
Step 4: Spread about 1/2 cup of the BBQ chicken mixture over one-half of the tortilla. Add red onions if using.
Step 5: Sprinkle another 1/4 cup of cheese over the chicken and fold the tortilla in half.
Step 6: Cook for 2-3 minutes per side until the tortilla is golden brown and the cheese is melted.
Step 7: Remove from heat, let rest for 1 minute, then slice into wedges and garnish with cilantro.
Notes
For extra crispiness, use a cast iron skillet and a very small amount of butter.
