Ingredients
1.5 lbs boneless skinless chicken thighs, cut into 1-inch cubes
1/2 cup mayonnaise
1/4 cup sweet chili sauce
2 tablespoons Sriracha (adjust to taste)
1 tablespoon honey
1 tablespoon lime juice
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
Salt and pepper to taste
Fresh cilantro and sesame seeds for garnish

Instructions
Step 1: In a medium bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, honey, lime juice, minced garlic, and grated ginger until smooth.
Step 2: Place the cubed chicken in a large bowl and season lightly with salt and pepper. Add about 1/3 of the bang bang sauce and toss to coat thoroughly. Let marinate for at least 15 minutes.
Step 3: If using wooden skewers, ensure they have been soaked in water. Thread the marinated chicken pieces onto the skewers, leaving a small space between each piece.
Step 4: Preheat your grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking.
Step 5: Place the skewers on the grill and cook for 5-6 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Step 6: During the final 2 minutes of cooking, brush the remaining sauce generously over all sides of the skewers until they are glazed and slightly charred.
Step 7: Remove from the heat, garnish with fresh cilantro and sesame seeds, and serve immediately.
Notes
Soaking wooden skewers for 30 minutes is crucial to prevent burning. Use chicken thighs for the best flavor.
