3 tablespoons extra virgin olive oil
3 cloves garlic, minced
1 large lemon, zested and sliced into rounds
1 teaspoon dried oregano
2 tablespoons fresh parsley, chopped
1/2 teaspoon sea salt
1/4 teaspoon cracked black pepper
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
Step 2: Pat the red snapper fillets dry with paper towels to ensure the seasoning adheres properly.
Step 3: In a small bowl, mix together the olive oil, minced garlic, lemon zest, dried oregano, salt, and pepper.
Step 4: Place the fillets on the prepared baking sheet and brush the olive oil mixture generously over each one.
Step 5: Top each fillet with 1-2 lemon slices and a sprinkle of fresh parsley.
Step 6: Bake in the center rack for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
Step 7: Serve immediately with an extra squeeze of fresh lemon juice if desired.
Notes
Ensure the fillets are of similar thickness so they cook evenly. You can substitute snapper with sea bass or tilapia if needed.
