Ingredients
4 red snapper fillets (approx. 6 oz each)
3 tablespoons extra virgin olive oil
1 tablespoon lemon zest
1 tablespoon lime zest
3 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon sea salt
1/4 teaspoon freshly cracked black pepper
Fresh parsley for garnish
Lemon wedges for serving
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
Step 2: Pat the red snapper fillets dry with paper towels to ensure a better texture once baked.
Step 3: In a small mixing bowl, combine the olive oil, lemon zest, lime zest, minced garlic, smoked paprika, salt, and pepper.
Step 4: Place the fillets on the prepared baking sheet and brush both sides generously with the zesty oil mixture.
Step 5: Bake in the center rack of the oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
Step 6: Remove from the oven, garnish with fresh parsley, and serve immediately with lemon wedges.
Notes
Ensure the fish is at room temperature for 10 minutes before baking for more even cooking. Use fresh citrus for the best zest flavor.
