  • Total Time: PT40M
  • Yield: 4 servings 1x

Ingredients

Scale

1 lb Chicken Apple Sausages, sliced into 1-inch rounds
1 lb Brussels Sprouts, trimmed and halved
2 large Granny Smith or Honeycrisp apples, cored and sliced into wedges
1 medium red onion, cut into wedges
3 tablespoons Extra Virgin Olive Oil
1 tablespoon Maple Syrup
1 teaspoon Dried Thyme
1/2 teaspoon Salt
1/2 teaspoon Black Pepper
Optional: Balsamic glaze for drizzling

Instructions

Step 1: Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper or aluminum foil for easy cleanup.
Step 2: In a large mixing bowl, combine the halved brussels sprouts, apple wedges, sliced red onion, and sliced sausages.
Step 3: Drizzle the olive oil and maple syrup over the mixture. Sprinkle with dried thyme, salt, and black pepper. Toss thoroughly until everything is evenly coated.
Step 4: Spread the mixture onto the prepared sheet pan in a single, even layer. Ensure the ingredients aren't overcrowded to allow for proper roasting.
Step 5: Roast in the preheated oven for 20-25 minutes, tossing the ingredients halfway through, until the sausages are browned and the vegetables are tender and caramelized.
Step 6: Remove from the oven and drizzle with balsamic glaze if desired. Serve immediately while hot.

Notes

For extra crunch, add 1/2 cup of pecan halves during the last 5 minutes of roasting.
