2 cups all-purpose flour

1/2 cup unsalted butter, melted
1/2 cup whole milk
1/2 cup sour cream
1 large egg
1.5 cups sharp cheddar cheese, shredded
1 large Granny Smith apple, diced small
1 tablespoon fresh thyme, chopped
Instructions
Step 1: Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin or line with paper liners.
Step 2: In a large bowl, whisk together the flour, baking powder, salt, pepper, sugar, and fresh thyme.
Step 3: In a medium bowl, combine the melted butter, milk, sour cream, and egg. Whisk until smooth.
Step 4: Pour the wet ingredients into the dry ingredients and stir with a spatula until just combined. Do not overmix.
Step 5: Gently fold in the diced apples and 1.25 cups of the shredded cheddar cheese.
Step 6: Divide the batter evenly among the muffin cups. Sprinkle the remaining 0.25 cups of cheese over the tops.
Step 7: Bake for 20-22 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden brown.
Step 8: Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack.
