Instructions

Step 4: Reduce the heat to low and begin adding the grated Parmesan cheese one handful at a time, whisking continuously until the cheese is fully melted and the sauce is smooth.
Step 5: Season with salt, black pepper, and optional nutmeg. Remove from heat and let the sauce sit for 2 minutes to thicken before serving over your favorite pasta.
